A personal story from our Founder & CEO, Elizabeth Tilton, of why and how OS BENEFiTS was built.

 

 

“It all started with a scone recipe when I was in the fourth grade.”  That’s my answer whenever I’m asked how I got into hospitality. 

As a kid growing up in New Orleans, I had an early knack for baking and a lifelong love of being in the kitchen. Although I had my heart set on being a doctor—a pediatric oncologist to be exact—something always drew me to food. This followed me to college where I started a catering business, Sweetology (please forgive the name, I was in the sciences at the time). I catered events as small as 15-person dinner parties and as large as 300-person corporate events out of my college apartment between classes. I decided I would “get it out of my system” and professionally cook for a year before going to medical school. During my time in the kitchen, I staged around the US, including at Le Bernardin (pictured below), and I was hooked.

I have always believed there is a connection between medicine and hospitality that comes down to a willingness to care for and serve others. In medicine, this is demonstrated through finding solutions that enhance patients' conditions and overall well-being. In the hospitality industry, it’s shown in the way we care for our teams and guests. Just as medical science should contribute to healthier lives, the hospitality industry's commitment to service should enrich the quality of experiences for both guests and team members, leaving a profound and enduring impact. This is what tied together my interest in both fields and ultimately why I left medicine to pursue a meaningful career in hospitality. But these two tracks in my life are converging again. 

My whole career since has been in hospitality and crescendoed when I founded Oyster Sunday, my first company, a hospitality studio offering independent operators nationwide a corporate structure with finance, operations, human resources, branding, and marketing support. Since launching in October 2019, we have worked with almost 300 hospitality businesses across the US – this includes both our clients and operators we offered free consultations to during the COVID-19 pandemic – including independent restaurants, bars, breweries, markets, hotels, and consumer goods brands. We have been listening to our clients' needs and finding solutions, which is what led us to build our second company, OS BENEFiTS, combining my two worlds of healthcare and hospitality.

Why did we build this program?

According to a 2021 report by the Bureau of Labor Statistics, there are over 400,000+ independent restaurants and 11,000,000 hospitality workers in the US, but only 32% of hospitality workers have healthcare coverage, compared to 77% of private industry workers.

With 7.5 million hospitality workers without insurance, this is an issue of care, recruitment, and retention in our industry. Our mission at OS BENEFiTS is to shepherd a new era of small business benefits and care. By offering free and discounted (20% - 80% off) goods and services our teams can have preventative care and perks at a pre-negotiated, reduced rate.

Our team—who has exceptional experience in the industry—knows what makes a hospitality business truly extraordinary, as well as the resources our industry lacks. Now we’re bringing the expertise, resources, and negotiating power of these major hospitality groups to independent restaurants and hospitality businesses across the country.

Elizabeth Tilton is the Founder + CEO of Oyster Sunday, a hospitality studio for independent F&B businesses—restaurants, bars, hotels, CPG brands, vineyards, farms, and beyond. Since launching in October 2019, Oyster Sunday has supported hundreds of hospitality businesses with concept development, financial strategy, project management, branding, marketing, human resources, operations, and training. 

In July 2021, Elizabeth launched her second company, OS BENEFiTS, the first benefits marketplace for independent hospitality businesses. It supports teams with affordably priced preventive care, crisis insurance, and lifestyle services. OS BENEFiTS relaunched in September 2023 with an updated UX, vendors, and more.

 
 

Elizabeth’s hospitality career started in her hometown of New Orleans, where she spent several years in the back of house at both Sucre and Restaurant August, before eventually moving to NYC to join Momofuku. On the branding team, Elizabeth managed the public relations and marketing for Momofuku’s New York restaurants, market research for Momofuku’s expansion in the US, and major partnerships with companies such as The World Bank, Sweetgreen, Patagonia, Lucky Peach, and MAD in Copenhagen.

Prior to launching Oyster Sunday in 2019, Elizabeth was part of the original leadership team and the Head of Brand at W&P, a vertically integrated design and manufacturing company developing culinary products. She managed a department to strategize and execute the launch of 300+ products including products in partnerships with Williams-Sonoma, West Elm, Lucas Films + Food52.
